Cook this meat low and slow, the marrow in that bone melts out, helping create a smooth, rich sauce, and the meat itself gets melting and tender. Inexpensive, incredibly delicious!

The Petite Tender when cooked properly has exceptions flavor and tenderness. It isn't a well known cut because it requires a skilled butcher to extract it. We are lucky enough to have a butcher that does so for us.
